Ladyfingers - sprøde & luftige

It's delicious and easy to bake your own ladyfingers, which can be used in tiramisu, ice cream desserts, or strawberry trifles, for example. They are light and airy, with a crispy exterior and soft in the middle.

Ingredients

(Approx. 40 pieces depending on size)

4 eggs (separated into whites and yolks)

130 g sugar

1 tsp vanilla sugar

160 g wheat flour

3 tbsp cornstarch

Powdered sugar for dusting

Method

(Preheat oven to 180 degrees Celsius, conventional oven)

Whisk egg whites until white and airy in a bowl. Add half of the sugar and whisk to a stiff meringue.

In another bowl, whisk egg yolks and the remaining sugar until very airy and light; this can take 3-4 minutes.

Fold the two mixtures together. Sift in the dry ingredients and gently fold everything together with a spatula to retain the air in the mixture.

Pour the batter into a piping bag with a round nozzle. Pipe long and narrow ladyfingers onto a baking sheet lined with parchment paper, in the size you desire. Lightly sprinkle with powdered sugar on top.

Bake for approx. 15 min. until lightly golden.

Cool the cakes and enjoy them in desserts or simply with a cup of coffee. You can always add a little coffee to the batter or lemon zest if you want a little extra flavor.
